Eating healthfully is the dream. Not only do you look and feel better, you can enjoy delicious, home-cooked food that you know is good for you. But plans to eat well often fall flat when life’s everyday distractions leap in, leaving no time for meal prep. On weeks like these, you might find that the beautifully green bok choy you bought on Sunday wilted away, waiting for that buddha bowl you never made.
Let’s face it: eating healthfully can be hard when you’re trying to do so on your own – that’s why I love the structure of a clean eating challenge. I love to cook healthy food, and these challenges give me the opportunity to do so with a minimum of fuss and stress.
Starting today, I’ll be embarking on Christine Byrne’s 14-Day Clean Eating Challenge. This challenge is great, because it motivates you to do that ever-so-important prep work by planning out your meals and snacks for a two-week span – it even gives you a shopping list! Simple recipes for each homemade, low-carb, gluten-free meal are included, so you can be sure not to get bogged down in food prep. Plus, you won’t have to worry about wasting food – I personally hate buying tons of great produce and then throwing it all away when it rots. In this plan, you use everything you buy; I’ll show you my empty fridge at the end of the week!
Day 0: My favorite part! I went to the grocery store to buy the first week’s worth of food. You will fill almost all of your grocery cart with items from the freshest part of the store: the produce aisle. I came away with a bounty of delicious food!
Now, my only task today was making frozen packs for the 2 weeks for smoothies…but now it’s all done. Can’t wait to start off the week!
