Breakfast:
No-cook Oatmeal
I could eat this blueberry goodness every day! Just mix the yogurt, almond milk, oats and chia seeds together, then add the blueberries. Put the bowl into the fridge overnight to enjoy a delicious, hassle-free breakfast!
Snack:
Tomato, feta, and basil salad with drizzle of balsamic
I grow my own basil, which makes this dish ROCK! It’s easy to grow, but needs a lot of sun.
Lunch:
Tomato, mango, and chicken salad
Tip: While you can buy pre-sliced mango, the whole, fresh fruit tastes much better! I highly suggest investing in a mango slicer; it may seem like a gadget that you wouldn’t need, but it makes cutting the fruit sooooo much easier!
Dinner:
Leftover kale and quinoa with fennel and chick peas
The mint adds a little freshness to the dish.
